Spinach prefers cooler climates, and this particular variety does best in winter. In fact, if it’s too warm, they’re likely to “bolt”. Spinach is a fast-growing plant, and as such would benefit from some fertilizing.
The best method for doing so is to harvest the outer, older leaves so that the younger leaves have time to grow in. This variety works great in salads or in cooking.
